Course Description

The success or failure of an operation depends on far more than the quality of the end product on offer.

The course is designed to teach core concepts of business management and the importance of getting it right. It will also cover key areas from analysis and budgets, through to menu costing and marketing, to stocktaking and staff. Through a variety of techniques, you will gain a deeper knowledge of the key aspects of business management and why these are critical to a successful and sustainable business.

Particular emphasis will be placed on the hospitality industry and the application of management principles and theories in a practical and simple manner.

Participants completing this course will be able to establish fundamental business development processes and key performance reporting infrastructures that contribute to a sustainable business proposition. The course aims to provide participants with a series of tools in which to measure and enhance the performance of their business.

Who is the course designed for?

Participants should have experience in food and beverage management, or management experience within the hospitality industry. The course is applicable to employees from both large businesses and SMEs.

Course Content

The course will feature a combination of classroom led discussion, a series of case studies, and group activity with special emphasis on reflective examples where students can bring real life problems to the group environment. The presenter will be available for discussion after the normal day’s events.

  • Understanding P&L – financial and management accounting for the hospitality industry
  • Cost systems, budgets and margins
  • Inventory management
  • Customer segmentation
  • Qualitative and quantitative research
  • Discounting versus adding value
  • Marketing for the SME
  • Recruiting the right staff
  • Performance management and developing key performance measures
  • Developing a balanced scorecard
  • Business case analysis

Guest Presenter

Brian Tomlinson is the recently appointed Group Manager - Transport at Auckland City Council.

Prior to this role, Brian was the Global Customer Lounge Manager for Air New Zealand, managing all of Air New Zealand’s owned and contracted lounges around the world. Brian headed a two year change management programme to ensure a remarkable customer experience, through world class customer service and offering a point of differentiation by being distinctly kiwi and obtaining business excellence.

Prior to his role at Air New Zealand, Brian was F&B Operations Manager for Sky City, looking after the business related aspects of a multiple unit business operation. Brian’s international career has taken him around the globe, with the primary focus of his roles being operational excellence, business improvement and performance management.

Brian holds an MBA from the University of Otago, and is the Secretary for the New Zealand MBA Association, which is linked with the NZ Business Excellence Foundation and the MBA Agency.

Fee

The fee is NZ$ 1,800 plus GST. This includes course materials, refreshments, lunches, one class dinner and a cocktail welcome the night before the course commences.
